What I ate Wednesday : 4-29-2014

Hey Guys! Welcome to another WIAW! Let's jump right in.
 
For breakfast I was in a bit of a hurry so I had a chocolate chip Larabar. I'm still not sure what I think of these. This is the second one I have tried and to me the thing I taste the most is the dates. I also had a few coffee almonds with it. And of course a bottle of water and my vitamins.
 
For lunch Boo wanted to go to iHop. I tried to eat as healthy as possible starting with a house salad. It was really good. I ate almost all of it just leaving one tomato slice and most of the croutons.
 
Then I had half of a bacon and white cheddar sandwich. It was on omelette with bacon, spinach, green onions and cheddar cheese topped with salsa and white cheddar. It came with fries but I only ate half of them.
For dinner I made fajitas again. They had chicken, tomatoes and multi-colored peppers. Then we added rice and southwestern corn. And of course a little bit of cheese. :)

WIAW 4-16-14

Hey Guys! Welcome back to WIAW!

For breakfast I had my most favorite eggs with spinach and cheese, a waffle and banana. And of course my vitamins.

For lunch I had half a can of zesty vegetable soup with rice. I also had chicken and cheese wrapped and baked in croissants (the recipe will be posted next Wednesday).

For my "dessert" after lunch I had two packs of snoopy fruit chews. These are my FAVORITES.

We had fajitas for dinner. I had two in tortillas with a bit of rice and a touch of cheese. They were absolutely delicious!
 
And for dessert JP and I split a banana and each had three cookies a piece.

WIAW: 4-4-14

Hey Guys! Welcome to another WIAW! I am trying to get these posted earlier in the day, so this week I am showing you what I ate last Friday the 4th. I had a really busy day that day, starting with therapy in the morning, then a few errands and then I had to get ready for my engagement pictures. :)
 
This is an every morning thing. I drink a bottle of water and take all of my vitamins. I will be doing a post on the vitamins that I take in the next couple of weeks, so you can keep an eye out for that.
 

This was a semi-quick breakfast, meaning it didn't require me to cook very much :) I had a banana, two waffles and some mocha coffee almonds. These things are delicious and have a good bit of caffeine in them. In 1 oz, it has as much caffeine as 2 oz of coffee!

For lunch, I stopped by Panera to pick something up. I got the pick two meal. I got it with the Sierra Turkey sandwich (so it comes with half of it) and the Caeser salad (it comes with half of a salad, I ate half of what they gave me, so I ate a quarter of the salad). It was really delicious and I made sure I got lots of veggies in.

For dinner, we went to Pied Piper Eatery with our friends Shawn and Sarah. I had never been there before so we decided to indulge a bit. We got fried pickles and loaded cheese fries. All four of us shared these, so I am not exactly sure how much I ate, but it was too much. :)

And for the main course, I had a burger with a fried egg and cheddar. I left the lettuce on my burger, but took the onion off. I got the mac and cheese with the burger (I should have gotten something healthier). I did eat all the mac, but didn't finish the burger. They were both pretty good.

WIAW: March 12, 2014

Hey Guys, welcome to WIAW #3! Today I had therapy and we ran some errands. Plus, we had lunch with my friend Stephy! So, it was a busy day and definitely not the healthiest food wise. But let's jump right in.
 
I had to make a quick breakfast so that I could get to therapy on time. I had two cinnamon waffles with a little bit of peanut butter on them and a banana. It was yummy. I even put some banana on one of the waffles. :)
 
We went to Cheddar's for lunch and Steph and I are HUGE fans of the spinach dip there. So of course we had to get some. We split it and shared the chips with Matthew.
 
I ordered the crispy chicken salad for lunch and HOLY COW there is a lot of food with that! I ended up eating probably half of the salad and chicken. I also ate the croissant. It was super delicious and I can't wait to eat the rest for lunch tomorrow.
 
After therapy, I was hurting pretty bad so I didn't feel like cooking. We had pizza (the Kroger brand). It was good, but I felt really bad that I didn't have healthier stuff with it.
 
So bad about being unhealthy that I decided to have a small slice of the cookie cake JP's mama gave him for his birthday. It was so worth it. :)

Healthy Eating: New Favorite Breakfast

Hey Guys! As you know, I have been working on my goal of eating slightly healthier. Last week when I was looking at some blogs on What I Ate Wednesday, I came across Kelly Runs for Food. On it, she had scrambled eggs with spinach. I don't know why I had never thought of that! I have been trying to think of a way to get more veggies in my diet, but wasn't sure how, especially at breakfast time. This was a perfect idea! So today, I want to share with you my new favorite (and very simple) healthier breakfast.

What you will need for this recipe is: Fresh spinach, two eggs, a slice of Velveeta (totally optional, but you know I can't resist cheese!) and some salsa.

The first step is to take a handful of spinach and cook it down in your skillet. You can do this on a medium heat. It doesn't take very long for the spinach to wilt down, so make sure you keep an eye on it.


While the spinach is wilting, you can cube up your cheese and mix it in with your eggs. You can mix your eggs up however you like. I just scramble mine up with a touch of water. Once the spinach is wilted, just add your eggs to the skillet and cook like you would normal scrambled eggs. I like my eggs cooked all the way when I am doing scrambled eggs.

After they are cooked to the consistency that you like, add 3-4 tablespoons of salsa. At this point I usually turn the heat up a little bit. This way, the cheese gets nice a golden brown on the bottom and it adds a ton of flavor.

This is really good with just a slice of toast and some fruit. This day I had it with one cinnamon waffle and a banana. But whatever you like to eat this with, it is DELICIOUS!

WIAW: March 5, 2014

Hey Guys! I can't believe it is Wednesday already! Time to take another look into what I eat on a daily basis. I was doing pretty good until we decided to go to get Chinese food for dinner (to celebrate JP's bday early).

For breakfast I had my new favorite meal (there will be a post on these eggs on Monday!). These are eggs with spinach and salsa. I also had a banana and one cinnamon waffle.


For lunch, I had half of this Archer Farms southwestern salad, half a bowl of Panera broccoli cheddar soup and one left over potato skin from dinner the other night. It was so yummy! I will be eating the other half of the soup and salad for lunch tomorrow.

For my snack I had a small Fuji apple and 2 Reese's peanut butter cups. I have been obsessed with Reese's lately.
Like I said, I was really bad at dinner. There weren't very many veggies to pick from so I ended up having two plates of mostly carbs. :( This was my second plate, but the first was pretty similar, just without the roll and chicken.
 
And for my dessert, an Angry Birds cupcake. Matthew picked these out to get for JP for our celebration. They were really good, and I did limit myself to one.

What I Ate Wednesday: Feb 26, 2014

Hey Guys! So I know this is my second post today, but I had some requests to see what I have been eating. I have started eating a bit healthier and I wanted to share with you guys. I asked on FB if this is something you would be interested in and a few people said yes. Hope you enjoy! Oh and please keep in mind I said I am eating a BIT healthier. I am slowly working my way up to eating a lot more healthy, but I do allow myself to indulge on certain things (for example, CHEESE and CHOCOLATE) just not too much.

For breakfast I had two eggs (with cheese), two pieces of toast and a whole Fuji apple.
Right after, I had a cup of Mocha Latte (well about half a cup) for a little after breakfast treat. Pardon the horrible picture, my flash refused to give me a good shot.

For lunch, I had a bowl of broccoli (with a touch of cheese), a slice of cold pizza and some apple chips. There actually were more apple chips than this, but I was on the phone with JP and couldn't stop snacking on them before I got a picture. Oops. :)
 
Next was my snack. Just a few Wheat Thins, one string cheese and two packs of Snoopy fruit chews.

I indulged a little bit at dinner with some potato skins. Uhg, disappointed that I actually ate them all. I really shouldn't have :(

I also had this extremely yummy chicken salad for dinner, but I ate it almost entirely before I remembered to take a picture of it. :)

And for my dessert a Reese's and a Diet Coke.

After my 30 minute walk I had a bowl of Special K Chocolate Almond cereal. If I don't eat a bowl before bed, my blood sugar will bottom out really bad.
 
In case you were wondering, I also had about 8 bottles of water for the day. So, I didn't do too well with my healthier eating cause of that dinner. :-/ Oh well, there is always tomorrow. What did you eat today??

Healthy Eating: Foods I Want to Cut Back On

Hey Guys!

One of my goals for 2014 was to start eating healthier. While I was down from my surgery, I did not stick to this goal at all! I was eating whatever sounded good (which wasn't very much) whenever I wanted to. One of my biggest problems was nighttime snacking! I get hungry right before bed, and I am supposed to eat a small snack before bed to help eliminate low blood sugars over night. The problem was I was eating a TON before bed.

So today I wanted to discuss some of the foods that I really want to cut back on. I consume a lot of this stuff and I really need to lighten the amount that I am eating. I want to talk to you about the top 4 things that I really want to cut back on in my diet.

1. Processed snacks- I eat a lot of these. Seriously. I can eat a whole container of Lays Stax in one day. These are so bad for you. They are high in calories and carbs. Not to mention they are a processed snack. Another thing that I eat as a snack a lot is cold hot dogs. This is a huge problem. I have cut back on this and only eat hot dogs in meals (I need to cut back on how many meals have them as well).

2. Chocolate- I eat way too much chocolate. Now, I can't eliminate chocolate from my diet all together. I firmly believe in allowing yourself a treat that you enjoy. The problem is how much of that treat. To combat my chocolate desire, my plan is to eat a little bit of chocolate (say 2 cookies or 1 Reese cup) with some fruit. This will keep my chocolate craving at bay and still help me feel like I am eating enough sweets. Another plan is to allow myself a bowl of Special K Chocolate cereal with almond milk if I am craving chocolate at night.

3. Fast Food- This is seriously some of the worst stuff you can put in your body! We have been eating fast food so much lately and it just has to stop. I want to start cutting back to once or twice a week. And then from there I want to go back to once a month.

4. Diet Coke- I hate that I am eliminating this. :) Seriously, I enjoy my diet coke. The problem is that it is really bad for you body. I am planning on going back to having one diet coke a day, but only if I consume my daily amount of water first.

Ok, so those are the things I want to cut back on in my diet. What kind of things are you wanting to eliminate or cut back on from yours? Any tips on how to I can cut back and what I can eat to replace any of these?
